We made it through January 2016! By now most of us have given up on our grand delusions and comfortably nestled into a more realistic expectation of the year ahead. Congrats!
I personally haven’t felt motivated to venture out into the cold just to go sweat it up at some gym. LAME. To make up for it, I’ve done some exploring in the kitchen with new healthy recipes. Here are my top 3 favourites – a yummy side, snack and dessert:
1) Carrot “Fries”
Ingredients
Half a pound of carrots
2 tbsp Olive oil
1 tsp Garlic powder
0.5 tsp Thyme
0.5 tsp Salt
0.5 tsp Pepper
1 tbsp Mayonnaise
1 tbsp Dijon Mustard
A few dashes of Tabasco sauce
Directions
Peel and cut carrots into… fry-like pieces (duh). Toss carrot pieces in olive oil and spices, then bake at 400 degrees for 35 minutes. Turn carrots over half-way through the baking. Or don’t, whatever. It’ll probably still be fine.
Dipping sauce: combine mayonnaise, mustard and Tabasco sauce for an extra kick.
2) Sweet Greek Yogurt
Ingredients
Fat-free, plain Greek yogurt
Half a Bosc pear
Crumbled walnuts
Honey
Directions
Combine yogurt with walnuts and diced pear. Really as much as you want; you’re the King of the Kitchen, yo. Drizzle that yummy shit with honey.
3) Peanut Butter and Banana Ice Cream
Ingredients
1 sliced up, frozen banana
1 tbsp of natural peanut butter
Directions
Blend the frozen banana. This is an exercise in faith; at first it seems like the banana will never become smooth. But keep going until it has a creamy texture. YOU CAN DO IT. Then add in the peanut butter and blend some more.
